In the vast green expanses of Madagascar lies our organic lychee plantation. These majestic trees, originally from China, produce clusters of exquisite fruits. Upon arrival at our factory, each lychee undergoes rigorous criteria: it must be perfectly healthy, with a high sugar content and an enchanting aroma.
Once selected, the lychees are immediately stored in a cold room at 5°C. This step is crucial to slow down their ripening and prevent browning, a rapid and inevitable process for this delicate fruit. Next, each lychee is meticulously washed and rinsed to eliminate any risk of microbial contamination before being gently peeled by hand. The first layer of skin is removed with a knife, while a second, slightly brownish layer adhering to the pit is removed using a special tool called a "lychee peeler."
The processing of lychees offers two possibilities: either the whole fruits are immediately frozen in plastic food bags, ready to be processed by the end consumer, or they undergo a refining process, pasteurization, and are packaged in plastic bins or metal drums. In either case, the lychees are placed in a dynamic freezing tunnel at a temperature of -30°C for over 24 hours, thus preserving their freshness and flavor.
These wild lychees grow in the lush forests of the East coast of Madagascar, in the Tamatave region. This area benefits from rich, fertile soil with orange hues, as well as a tropical climate marked by abundant rainfall during the austral winter and high temperatures throughout the year.
